Qalayet Bandoura is a quintessential and authentic Jordanian dish, whose name literally means “a frying pan of tomatoes.” It embodies the simplicity and freshness of Jordanian home cooking, often prepared quickly for a family breakfast or a light dinner. This dish is a celebration of the sun-ripened tomatoes and fresh peppers that thrive in the Jordanian climate. Traditionally cooked and served in the same metal frying pan (qalayet), it represents a rustic, shared eating experience that is central to Jordanian family life. Its versatility is key; it can be enjoyed simply with bread to scoop up the rich sauce, or alongside eggs, yogurt, or rice. The option to add hot peppers for spice reflects the personalized touch inherent in Jordanian household recipes, making it a beloved staple that truly tastes of home.
Nutrition Tip:

Tomatoes contain lycopene, which is what gives them their red color. Lycopene is a powerful antioxidant that fights cancer cells and inhibits free radicals. However, lycopene is more easily absorbed in cooked tomatoes than raw ones.
Ingredients:

3 Diced tomatoes

1 Bell pepper, any color

2      cloves of Garlic

2T Olive oil

1/2t Salt

1/2t  Pepper

Steps:

1- Roughly chop the tomatoes, peppers, and garlic.

2- On medium heat, fry garlic and peppers, then add the tomatoes.

3- Sauté for about 3-5 minutes. Be careful not to let them burn.

4- Sprinkle with salt and pepper.
