It is not merely a dip but a fundamental part of the Jordanian table, commonly enjoyed as a breakfast dish or a shared appetizer (mezze) before the main meal. In Jordanian culture, a generous drizzle of high-quality olive oil and a dusting of paprika or cumin on top are typical hallmarks, reflecting the local taste and the importance of hospitality. Its presence is essential in both humble family dinners and lavish feasts, symbolizing a shared culinary heritage across the Levant.

Chickpeas are high in fiber and protein. For individuals with diabetes and those with insulin sensitivity, chickpeas can be a good source of carbohydrates.

Ingredients:

2 cups | Chickpeas (cooked or canned)

¼ cup | Tahini

¼ cup | Lemon juice

1T | Salt

1clove | Garlic (crushed)

1T | Parsley (finely chopped)

½T | Cumin

Steps:

1- Drain and rinse chickpeas, setting aside ¼ cup liquid from the can.

2- Combine garlic, tahini, salt, and lemon juice in a food processor and blend.

3- Add chickpeas and ¼ cup chickpea liquid and blend.

4- Place in a serving bowl.

5- Garnish with parsley, cumin, and olive oil.

Serve this dish immediately with fresh, warm pita bread, or cover and refrigerate.
