Fatoush is an authentic Jordanian salad that perfectly embodies the resourcefulness and freshness of Levantine cuisine. What sets it apart is the use of toasted or fried pieces of pita bread, which serve the dual purpose of adding a satisfying crunch while preventing waste of stale bread. The inclusion of seasonal garden vegetables like cucumbers and tomatoes, along with wild greens such as purslane (known locally as bakleh), reflects the Jordanian practice of utilizing fresh, local produce. The dressing, typically featuring sumac and lemon juice, gives it a characteristic tangy flavor that is distinctly Jordanian. Traditionally served alongside grilled meats or as part of a mezze spread, Fatoush represents the Jordanian approach to creating vibrant, textured dishes that make the most of simple ingredients, while the communal act of sharing the salad from a large platter underscores the deeply social nature of Jordanian meals.
Nutrition Tip:

Baklah leaves have a high content of fiber and water, which gives them a crispy texture and makes them effective in stimulating digestion. It is also a rich source of B vitamins.
Ingredients:

1 Loaf Pita bread (toasted and cut into small pieces)

3-4 medium Tomatoes (diced)

3 cups Cucumbers (diced)

½ cup Fresh Mint (chopped)

½ cup Baklah or purslane (optional)

¼ cup Parsley (chopped)

1t Onions (chopped)

½ cup Salt

1t Lemon juice

½ cup Garlic (crushed)

1T Olive oil

Vinegar

Steps:

1- In a deep bowl, combine the tomatoes, cucumber, onions, fresh mint, baklah, and parsley. Toss gently.

2- In a small bowl, combine the garlic, olive oil, lemon juice, vinegar, and salt. Mix well.

3- Pour the dressing over the salad. Toss gently.

4- Sprinkle the toasted bread over the salad and serve immediately.
