Fatet Al-Hummus is a deeply authentic Jordanian dish that exemplifies the resourcefulness and comfort-oriented nature of the country’s home cooking. The name “Fatet” itself refers to the technique of using pieces of stale Arabic bread as a base, a traditional practice that prevents waste while creating a wonderfully textured dish. This is a cornerstone of family meals and special occasions alike, particularly during Ramadan for the suhour meal, as it provides sustained energy. The combination of softened bread soaked in chickpea liquid, topped with the rich tahini-yogurt sauce, and the crunch of toasted pine nuts creates a complex layering of textures and temperatures that is highly prized in Jordanian cuisine. It represents a humble yet celebratory dish, showcasing the Jordanian talent for transforming simple, everyday ingredients into something truly special and deeply satisfying.

Ingredients:

1kg (3 cups) Chickpeas (cooked or canned)

4 loaves of Arabic bread

2T Garlic (crushed)

½ cup Lemon juice

2T Tahini

¼ cup Yogurt

1t Salt

¼T Cumin

½ cup Pine nuts (toasted)

1T Parsley (finely chopped)

Steps:

1- Keep ½ cup of cooked chickpeas in a bowl.

2- Combine tahini, lemon juice, yogurt and water if needed in a food processor, blend.

3- Add garlic and salt.

4- Add in chickpeas and blend well.

5- Cut bread into small pieces and place in a serving bowl.

6- Mix half of the chickpea liquid with the bread, then add the other half.

7- Garnish with chickpeas, cumin, parsley and pine nuts.
